摘要研究了在有机溶剂中固定化脂肪酶对樟核油、棕榈油水解反应的催化作用，考察了有机溶剂／水、固定化酶量、反应时间等因素对水解反应的影响。实验结果表明：在３７℃时，水解樟核油的最佳条件是有机溶剂／水９８％、固定化酶量００２ｇ／ｇ油、反应时间６ｈ，而水解棕榈油的
