Abstract： With Stevia as the basic raw material,we optimized the stevioside extraction conditions,for the purpose of enhancing the extraction yield of stevioside,and at the same time,to determine the effect of cellulase on the extraction yield of stevioside.Based on a single factor and orthogonal test,the conditions about maximum extraction rate of stevia were obtained,where the solid-liquid ratio and the cellulase enzyme concentration were 1:10 and 0.2% respectively,at the temperature 50 ℃ and under pH=5 for 90 mins.The extraction rate of stevioside under the optimal conditions was 13.98%,which was 1.94% higher than before.
