Abstract:The effect of temperature,light,pH on the stability of Prunella vulgaris L flavonoids was studied with Ultraviolet spectrophotometry.The change of scavenging activity on DPPH free radical of Prunella vulgaris L flavonoids was selected as the index to investigate the effects of temperature,light,pH,oxidizing agent,reducing agent,food materials,preservative,metal ions on DPPH free radical scavenging activity of Prunella vulgaris L flavonoids.The results showed that high temperature with light have a little degradation on Prunella vulgaris L flavonoids and reduce its activity,while reducing agent Na2SO3,food materials glucose,preservative sodium benzoate and Cu2+ or Mg2+ have significant effect on DPPH free radical scavenging activity of Prunella vulgaris L flavonoids.The effect of oxidizing agent H2O2 is relatively smaller.The antioxidant activity of Prunella vulgaris L flavonoids is stable under the pH for six and seven. 更多
